Haciendas in Mexico are large estate or fincas of the Colony. The name of our tequila, Hacienda de Xalpa, comes from the place where we grew up. Love, work, discipline, traditions, and fun are the characteristics of this family.

Our methods are focused on quality and taste, taking maximum care on every step of the process, from the selection of the agave plants to the bottling up to 8 years later.

Environment

All waste water and fibers from the process are taken to a composting plant where final product is applied as natural fertilizer in the agave fields. We also used natural energy resources: 95% of our electricity comes from solar panels and all the steam production of the distillery is obtained through natural gas.

Our main supply, agave, is carefully grown in our own plantations, and also in other producer’s fields around Jalisco, with whom we have a satisfactory and close relation.   • Aging: None.
  • Color: Crystal white
  • Description: Tequila at its purest, fresh, light, and lovely cooked agave flavor.
  • Aroma: Herbaceous and peppery.
  • Tasting: Excellent balance between crispness and sweetness with a long pleasant finish.

Tequila Reposado 100% agave

Reposado 100% agave

  • Aging: A blend of tequilas aged for a minimum of 7 months and up to 14 months.
  • Cooperage: White Oak 200 It casks.
  • Color: Dry straw with a touch of golden flashes.
  • Description: A well crafted tequila with substance and finesse.
  • Aroma: Composed of notes of vanilla, honey, soft Oak and Butter Scotch.
  • Tasting: Mouth filling with soft tannins, a hint of sweetness, smooth and with a long lingering finish.
  • Texture: Silky

Tequila Añejo 100% agave

Añejo 100% agave

  • Aging: A blend of tequilas aged for a minimum of 12 months and up to 18 months.
  • Cooperage: White Oak 200 It casks.
  • Color: Honey and toasted almonds.
  • Description: Subtleness is over strength, smoothness and elegance.
  • Aroma: Notes of vanilla, soft Oak, and apples.
  • Tasting: Mouth filling, vanilla, hints of tobacco and Oak, balanced with strength and a long smooth finish.
  • Texture: Velvety

Ingredients

  • 2 oz Tequila Hacienda de Xalpa Blanco
  • 4 slices of cucumber skin on
  • 1 oz lime juice
  • ¾ oz simple syrup
  • 2-3 slices jalapeno

Preparation

  • Muddle cucumber and jalapeno on shaker and add all ingredients over ice
  • Shake and double strain over tajin rimmed glass
  • Garnish with sliced cucumber

  • 2 oz Tequila Hacienda de Xalpa Blanco
  • 3 oz fresh grapefruit juice
  • 1 oz lime juice
  • ½ oz lime juice
  • ½ oz grapefruit soda

Preparation

  • Add all of the ingredients in a tall glass with ice and a salted rimmed glass
  • Garnish with a grapefruit wedge

  • 2 slices of red dragon fruit
  • 1 oz lime juice
  • ¾ oz simple syrup
  • ½ oz elderflower liqueur

  • Muddle dragon fruit
  • Add the rest of the ingredients to shaker with ice
  • Shake and double strain
  • Garnish with lime and dragon fruit

Process

Harvesting

Agaves reach maturity after five to eight years of age. The harvesters called “jimadores” use a long knife called a “coa” to remove the leaves of the plant down to its base and expose the core which looks like a huge pineapple “piña”.

“Piñas” can weight between 10-100 kg and are hauled to the distillery where they are cut in halves and manually fed into stainless steel tanks or autoclaves where they are slowly cooked by steam pressure for 24-48 hours. After this time, inulin (agave sugar) is converted into sugars (fructose and sucrose) and piñas will be softened and ready for milling.

Shredding and milling

The cooked “piñas” are shredded and mashed to release the sugary juices that will be separated and taken to the next part of the process. The pulp will be discarded and transported to our composting plant.

Fermentation

The agave juices are captured in fermenting tanks where the sugars can be now converted into alcohol using natural yeasts, which will determine the flavor and characteristics of Tequila Hacienda de Xalpa. This process takes about 2 to 4 days.

Distillation

The mosto is distilled twice in stainless steel column stills until we get a tequila of 55% alcohol content. Distilled water is used to reduce the alcohol content to 38-40%.

Bottling or aging

Tequila result of the second distillation can be bottled as “tequila blanco” or can be aged in Oak barrels to produce a reposado or an añejo, where wood will add different characters and aroma to the spirit.
